a few people have asked for some of the recipes i rave about, so here are two: italian chicken and chocolate tofu parfait!
ITALIAN CHICKEN
ingredients:
chicken breasts, halved and trimmed of fat (i use 3 for this recipe)
1/3 cup Dijon mustard
2 TBS red wine vinegar
2 TBS honey
2 TBS olive oil
1/2 TBS Herbs de Provence (which is winter savory, thyme, rosemary, basil, tarragon, and lavender flowers)
directions:
whisk all ingredients (except chicken) together. mix with chicken and marinate at least 30 minutes. place chicken on a sprayed sheet pan and bake at 300 degrees for about 25 minutes; discard extra marinade. you can cut the chicken into thin slices and place on bread for a sandwich, toss it with a salad, or (my favorite) just serve it up whole.
for every 2 ounces of cooked chicken, it has 100 calories, 14 grams of protein, and less than 3 grams of fat.
CHOCOLATE TOFU PARFAIT
note: if you don't like tofu, don't let this prevent you from trying this! tofu has no taste - it simply takes on the taste of everything around it, and in this case, that means chocolate!!
ingredients:
1 (12 oz) package of chocolate chips
1/3 cup coffee, regular or decaf
1 (16 oz) package silken tofu
1 TBS honey
1 (12 oz) non-fat whipped topping
directions:
over a double boiler, melt chocolate in a medium bowl. in a blender or food processor, mix the coffee, tofu, and honey. when smooth, slowly add the melted chocolate (or you can fold everything together in a bowl if your food processor is too small like mine is; just make the sure the chocolate is very very melted and warm). fold or process until smooth and fully incorporated.
with spatula, gently fold in whipped topping. place in the refrigerator for 3 hours or until firm.
for a 1/2 cup, it's 150 calories, 8 grams of fat, 20 grams of carbs, and 3 grams of protein. (ok, so it's not THE healthiest food in the world, but it's so worth it!)

question...if you made the chocolate thing without coffee, what would happen? the tofu does not scare me...the fact that I hate coffee does. :)
i couldn't taste the coffee, and i don't think sue anne could either. i think it would be ok without it. mix the tofu and honey and see how thick it is. if it's too thick, just add water instead. hope they turn out ok!
yea, i don't like coffee at all either, and i couldn't taste it. so i think you should be ok, but if you're scared, do the water thing. hope you like it... it's SOOO yummy. like really... makes me hungry just thinking of that chicken and veggies!
